With hints of spring on the horizon, I’ve discovered my new favorite breakfast of the season: a slice of coconut cream pie sprinkled with a generous handful of fresh blueberries. Yum! If it seems like too much of a guilty pleasure first thing in the morning, think of it as up-graded coconut cream yogurt with fruit.
